From beginning his career in the legendary kitchen of Jiggs Kalra to representing India on prestigious international culinary platforms, Chauhan has consistently explored how traditional flavours can be preserved while adapting to changing consumer expectations.

He was among the youngest Indian chefs to represent the country at the World Gourmet Summit in Singapore and the World Gourmet Affair in Switzerland. These experiences helped shape his approach to cooking—one rooted in precision, authenticity and respect for ingredients.

A significant chapter in Chauhan’s career came through Fabcafe, the healthy-gourmet dining chain developed alongside FabIndia. Over seven years, he played a key role in building its culinary and supply-chain systems, helping translate the philosophy of wholesome food into a scalable restaurant format.

The experience also exposed him to one of the food industry’s most persistent challenges: maintaining the same flavour, quality and experience across multiple kitchens without becoming dependent on individual chefs or artificial preservatives.

This challenge led Chauhan deeper into food research and development. Over five years at Jatiyan Foods Pvt. Ltd., he worked on developing a proprietary clean-label premix platform designed to help kitchens reproduce complex flavour profiles in under five minutes.

The system seeks to eliminate three major operational concerns for quick-service restaurants and food businesses—chef dependency, variation in taste and reliance on preservatives. Chauhan describes the approach as the “Coke Model”: his team engineers the flavour concentrate while the business controls the final customer experience.

The platform has been tested across QSR, institutional-supply and FMCG formats. Its larger promise lies in allowing heritage recipes and distinctive flavours to be standardised across hundreds of kitchens without stripping them of their original character.

Chauhan’s latest entrepreneurial chapter is Ingri, an ingredient-focused café co-founded with his daughter, Ilisha Chauhan. Located inside Museo Camera, the art and photography museum in Gurugram, the café brings together food, culture and community in a relaxed indoor-outdoor setting.

The name Ingri stands for “Ingredient Integrity”—an idea that captures Chauhan’s longstanding philosophy of “eat well, feel good.” The menu moves away from heavy sauces, artificial preservatives and overly complicated presentation. Instead, the focus remains on clean-label food, seasonal produce and carefully sourced ingredients whose natural flavours lead the plate.

Its offerings include wood-fired pizzas, fresh sourdoughs, roasted tomato shakshuka, breakfast plates, salad bowls, seasonal soups, health-conscious snacks, speciality coffees, coolers and clean-label desserts.

Set amid Museo Camera’s sunlit corridors and open lawns, Ingri has also emerged as a pet-friendly social space. Beyond dining, it hosts community gatherings, culinary conversations and storytelling sessions connected with the museum’s cultural environment.

Across these ventures, a consistent thread runs through Chauhan’s work: the belief that healthy food need not compromise on flavour and that culinary creativity can coexist with operational scale.

As India’s QSR, retail and quick-commerce food ecosystems expand, the systems developed by Chauhan could become increasingly relevant. Last-mile delivery may have been solved, but producing the same taste across hundreds of neighbourhood kitchens remains an enormous challenge.
